Strawberry Crumb Bars - Buttered shortbread dough with fresh strawberries and crumbs topping it. They're a must for fresh summer berries!
These bars have different names, but in our house they are small pieces of strawberry. You can call them streusel bars, oatmeal bars, or even crumbled bars. But it doesn't really matter what you call it, they are a must when you can have fresh summer berries!
* ingredients :
° 1/2 cup white sugar
° 1/2 teaspoon baking powder
° 1-1/2 cup all-purpose flour
° 1/4 teaspoon salt
° 1/2 cup extra cold butter (8 tablespoons or 1 stick of butter)
° 1 teaspoon vanilla
° 1 scrambled egg
° 2 cups fresh strawberries, chopped
° 1/3 cup white sugar
° 2 teaspoons cornstarch
* Directions :
Heat oven 375 degres F .
Place parchment paper in bottom of 8x8 pan attached to side of pan.In a medium bowl, mix ½ cup sugar, flour, baking powder and salt.Using fork or pastry knife to cutting butter into flour mixture.(Very important: make sure the oil is very cold.) Working with dough to pieces are small. The dough will be crumbly. You can also beat in a blender until you have pea-sized crumbs.In separate measuring cup or small bowl, beat eggs with fork.Add the eggs and vanilla to the flour mixture and stir until it forms a crumbly mixture.Spreading half of batter evenly on bottom of prepared bowl.In another bowl, mix 1/3 cup sugar and cornstarch. Add strawberries.
Pour strawberry mixture equaly over the bottom crust.Press the remaining dough onto the strawberry filling.Bake in the preheated oven for 45 minutes or until light golden brown.) Let it cool completely before cutting into cubes.I recommend refrigerating until ready to eat.
