1 pound ground beef

1 packet taco seasoning mix

1/4 cup water

1 can Ro*Tel diced tomatoes with chilies (drained)

1 can Nacho Cheese Soup

1/4 cup sour cream

1 cup shredded cheddar cheese

12 8-inch soft tortillas

Toppings (optional): guacamole, fresh cilantro, and additional sour cream

Mexican Taco Lasagna Instructions


Preheat your oven to 350°F and lightly grease a 9x9 baking dish.

In a large skillet over medium heat, brown the ground beef, breaking it apart. Once fully cooked, drain off any excess fat.

To the skillet, add taco seasoning and water, letting it simmer for about 2 minutes.

In a separate bowl, combine the drained tomatoes, nacho cheese soup, and sour cream. Mix in the seasoned beef.

Lay down 3 tortillas at the base of your baking dish. Layer on a third of your beef mixture.
